We source premium Canadian hard shell live lobster. The ideal lobsters are vigorous and well-seasoned for international shipment. We source the vast bulk along the Atlantic side of Nova Scotia and the so called ‘ black lobster ’ it tends to produce. Our sourcing relationships in the best ports go back in many cases 30 years or more.
Tangier Lobster has an experienced staff of coastal residents who are extremely well versed in lobster grading and quality control. We rely upon their instincts and experience in addition to the increasing use of applied science. A database of protein analysis is maintained for all purchase lots to support and assist our daily decision making.
